Frank Weber, Virgin Voyages

Spearheading hotel operations for Virgin’s newest project, Virgin Voyages, Frank Weber is responsible for leading and overseeing numerous vital tasks, including: operational planning & design, execution, and management of all hotel administration, entertainment, housekeeping, food and beverage, guest services, casino, retail, wellness/spa, and onboard revenue operations onboard all of the line’s ships. Joining the Virgin Voyages team in its launch year, Frank prides himself on providing the brilliant guest experience that Virgin is known for. With more than a decades’ experience in leading food & beverage development and operations, Frank’s priorities lie in creating and designing innovative dining and entertainment above all else.

Stefania Lallai, Costa Cruises

After working as communication and corporate responsibility director for TNT Express Italy, Stefania Lallai joined leading cruise line Costa Cruises in a brand-new position created uniquely for her. Now, in her role as sustainability and external relations director at Costa Cruises, Stefania holds innovation and change at the heart of her work. Boasting more than 20 years’ experience in the ever-evolving sectors of communication and sustainability, Stefania offers extensive expertize in transforming global trends and creating actionable plans.

At the Marine Catering Forum, Stefania will shed some light on the issue of sustainability in the session 'Sustainability at Sea - Part 1'.

Mark Zeller, MSC Cruises

Beginning his career in hotel operations as an assistant maître d’ with Holland America Line, Mark Zeller has ventured leaps and bounds since he started out in the marine catering industry back in 1999. After working his way up, Mark Zeller found himself holding the title of youngest hotel director in Holland America Line’s fleet. Since then, Mark has worked with Celebrity Cruises, where he held the position of hotel director, before joining MSC Cruises.

Mark’s near-20 years’ experience in the industry makes him the ideal figure to share valuable insights in the session 'Designing the Perfect Galley'.

Marc Zornes, Winnow

Marc Zornes is most well known in the industry for co-founding food waste solution suppliers, Winnow. Since 2013, Winnow has worked to minimize the hospitality industry’s food waste, with reports of kitchens using Winnow cutting waste in half within 12 months of use. Prior to leading innovations at Winnow, Marc was a top-rated engagement manager for McKinsey & Co., where he was a leader in consumer and sustainability practices.

Utilizing his established expertize, Marc will share his thoughts in the session 'Sustainability at Sea - Part 1'.
